Red Pepper and Cashew Dip–it tastes like nacho cheese!

  • 2 Cups Raw Cashews, soaked in water for at least 1 hour and drained
  • 1 medium Red Bell Pepper; stem and seeds removed and cut into 4-6 pieces
  • 2 tsp Smoked Paprika
  • ΒΌ Cup Water plus more to thin if necessary
  • 3 Tbsp Lemon Juice (Juice from 1 Lemon) or Apple Cider Vinegar
  • 3 Tbsp Nutritional Yeast
  • 1 Tbsp Agave or Coconut Nectar
  • 2 Cloves Garlic or 1 Tbsp Chopped Garlic
  • 1 tsp Sea Salt plus more to taste
  • Water


  1. Combine all ingredients in high-speed blender (I use a Vitamix). Process until Smooth
  2. Adjust consistency with Lemon juice and/or Water
  3. Adjust seasoning with Sea Salt and/or Smoked Paprika
