Ingredients

  • Ingredients for Taco Filling
  • 1/2 Cup Walnuts soaked in water for 1-4 hours and drained
  • 2 Tablespoon Cumin
  • 1 Teaspoon Chili powder
  • Pinch Chili Flakes
  • 2 Clove Garlic Peeled
  • 1 Lime Juiced
  • pinch Sea salt
  • 1 Cup Quinoa Cooked and Cooled
  • Taco
  • Tortillas or Taco Shells
  • Swiss Chard Leaves
  • Green or Red Leaf Lettuce Leaves
  • Ezeikel Wraps
  • Garnishes (Optional)
  • Salsa (Tomato, Mango, Pineapple, etc)
  • Guacamole or sliced Avocado
  • Fresh Cilantro Leaves
  • Green onion Thinly Sliced
  • Red cabbage Thinly Sliced
  • Carrots Grated
  • Jicima Grated
  • Matchstick sliced Radishes
  • Red onion Shaved
  • Tomatoes Diced
  • Sprouts Any type
  • Braggs Liquid Amino Acids to drizzle on
  • Fresh Lime Wedges to squeeze onto tacos

Instructions

  1. Preparation for Taco Filling
  2. Place above ingredients in food processor. Pulse on and off for 10 second intervals until nut mixture resembles cooked taco "meat"
  3. Fold in the Quinoa
  4. Preparation for Tacos
  5. Build each Taco by placing Chard, Lettuce or Wrap on plate.
  6. Fill with various ingredient and roll or fold wrapper around fillings.
  7. Enjoy with a glass of dry Rose wine or freshly squeezed juice-spiked Sangria.
