Zucchini Ribbon, Sweet Cherry Tomato, Feta and Pinenut Salad

Ingredients

  • 4 Small Zucchini about 6 inches long
  • 1 Pint Cherry Tomato Sweet, cut in half lengthwise
  • 1 Tablespoon Extra Virgin Olive Oil the higher quality the better
  • 1/4 Teaspoon Sea salt
  • 1/2 Lemons - Juiced
  • 2 Ounce Feta Cheese
  • 2 Tablespoon Pinenuts Toasted (at 325 degrees for 5 minutes)
  • 6 Leaf Fresh Basil cut “chiffonade” or thinly cut ribbons
  • Freshly ground black pepper To taste

Instructions

  1. With a wide mouth peeler, cut long strips off Zucchini until you hit seed area
  2. Combine Zucchini and Tomatoes
  3. Just before serving, toss with Olive Oil, Sea Salt, Lemon, Feta Cheese and Pinenuts
  4. Top with Basil and Freshly Ground Pepper
