Zucchini Ribbon, Sweet Cherry Tomato, Feta and Pinenut Salad

Saver the end of summer by enjoying this salad. Use smallish zucchini and shave ribbons off of them; rotating every third cut or so. Do not add olive oil, lemon or salt until just before serving as they will break down zucchini. I like to use the sweet “Sun Gold” Tomatoes

Ingredients

  • 2 Cup Raw Cashews
  • 1/4 piece Vanilla bean
  • 2 Tablespoon Raw honey or raw agave nectar
  • pinch Sea salt
  • Distilled water to adjust consistency

Instructions

  1. Soak 2 Cups Raw Cashews in distilled water at least 2 hours (I do this overnight)
  2. Drain and process in food processor with a little vanilla (bean if you want to be totally raw, Costco has them for cheap!), Salt and Agave nectar or Honey).
  3. Adjust consistency incrementally with water. Store in refrigerator for up to 2 weeks.

Red Pepper, Smoked Paprika And Cashew Dip

Ingredients

  • 2 Cup Raw Cashews, soaked in water for at least 1 hour and drained
  • 1 Medium Red Bell Pepper; stem and seeds removed and cut into 4-6 pieces
  • 2 Teaspoon Smoked Paprika
  • 1/4 Cup Water plus more to thin if necessary
  • 3 Tablespoon Lemon Juice (Juice from 1 Lemon) or Apple Cider Vinegar
  • 3 Tablespoon Nutritional Yeast
  • 1 Tablespoon Agave or Coconut Nectar
  • 2 Clove Garlic or 1 Tablespoon Chopped Garlic
  • 1 Teaspoon Sea Salt plus more to taste

Instructions

  1. Combine all ingredients in high-speed blender (I use a Vitamix). Process until Smooth
  2. Adjust consistency with Lemon juice and/or Water
  3. Adjust seasoning with Sea Salt and/or Smoked Paprika

Mock Calamari Salad

Serves 2-4

Mock Calamari Salad

Ingredients

  • 115
  • 2 Count Coconut meat on the thicker side and opaque; julienned
  • 2 Cup Napa cabbage Jullienned
  • 2 Roma tomatoes Cut lengthwise into 8 pieces
  • 1/2 Medium Cucumber Cut in half lengthwise and cut into thinly sliced half circles
  • 1/2 Red onion Thinly sliced
  • 2 Thai Chiles or 1/2 jalapeno Thinly sliced
  • 1/4 Cup Cilantro leaves Coarsely chopped
  • 1/4 Cup Mint leaves Coarsely chopped
  • 1/2 Cup Raw almonds Coarsely chopped
  • 218
  • 2 Limes juiced About 1/4 cup
  • 1/2 Cup Braggs liquid amino acids (classic recipe would call for fish sauce)
  • 2 Tablespoon raw agave nectar
  • 1 Teaspoon Ginger Finely grated

Instructions

  1. Combine salad ingredients in a large bowl.
  2. Mix dressing ingredients in a small bowl
  3. Toss salad with dressing.
  4. Divide onto 4 plates and sprinkle each plate with one quarter each of the cilantro, mint and almonds

Meyer Lemon Ice

Serves 4-6

Ingredients

  • 3/4 Cup Freshly squeezed Meyer Lemon Juice
  • 1/4 Cup Freshly squeezed Lemon Juice
  • 3/4 Cup raw agave nectar
  • 2 Cup Distilled water

Instructions

  1. Combine ingredients in shallow pan. Place in freezer. Freezer for 4 hours Every 1/2 hour, stir with two forks. This will create a fluffy ice. Transfer to airtight container. Serve in glasses with blood orange segments and diced Mangoes

Good Morning Raw Oatmeal

Oat Porridge is one of my breakfast staples. I get a lot out of the simple pleasures of life, and blending this with blueberries gives it a brilliant purple colour which makes me laugh in the wee hours of the morning because purple is my favourite colour (“look honey, purple food”!)
