Cheesy Crunchy Kale Chips

Ingredients

  • 1 Large Bunch Kale
  • 2 Cup Raw Cashews
  • 1 Teaspoon Ground Himalayan salt
  • 1 Teaspoon Agave nectar
  • 1/2 Teaspoon Smoked Paprika
  • 1 Tablespoon Bragg's apple cider vinegar or lemon juice
  • 2 Tablespoon Nutritional Yeast
  • 1 Clove Garlic
  • 1/2 Small Red pepper
  • Water

Instructions

  1. These vegan kale chips are so delicious you will never go back to ingredients
  2. Preheat oven to 175 or dehydrator to 105-110.
  3. Soak the cashews in distilled water for 2 hours.
  4. Drain and add the cashews to a Vitamix blender or food processor, add the rest
  5. of the coating ingredients except the kale
  6. Adjust consistency with a slow stream of water until creamy
  7. Clean and de-stem a large bunch of kale and tear into bite size pieces.
  8. Put in a large bowl and drizzle 1/2 of the cheesy coating. Rub thoroughly into kale, making sure to get to get into the curly ends. Add more sauce as needed.
  9. Dehydratefor 7 hours, until crispy, or line a baking sheet with parchment paper and bake at 175 degrees for 2 hours.

Almost Raw Vegan Strawberry Cheesecake and Beach Running

In the culinary world, and I think (finally!) in the upper right quadrant of the states, spring has sprung and bumper crops of asparagus, strawberries, and new potatoes are flooding the farmers’ markets and produce departments. Inspired by some really flavorful strawberries and a desire to create a dessert that would work for a Passover or Easter dinner, I created a strawberry cheesecake. It’s definitely vegan, almost “raw” and by some standards, “Paleo”.  Okay, so I took a little culinary leeway on the last eating-style category, as I’m not sure if the cave people were sugaring back in the day.  I’m also pretty sure that they were eating more slugs than wild salmon from Whole Foods, but I digress……. 🙂   I love making raw, vegan “cheese” cakes because they are a cinch:  If you can turn on a blender, you can make one in a snap.  The cleanup is minimal as well.

Raw Vegan Pumpkin Cheesecake

This concept has been brewing in the back of my mind for several years. I wanted to keep the recipe RAW and VEGAN so the first ingredient I tossed out the window was canned pumpkin (not raw). I substituted carrot juice (finally a good use for carrot juice!).  I then assembled ingredients that are typically used in vegan cheesecake: cashews for the body; coconut oil and butter for the consistency; lemon for the acidic tang that you taste in cheesecake; agave and spices.  Yes, this dessert is raw. And yes, it is vegan. And yes, it is made with whole foods.  However, it is calorically dense and a little will go a long way. In the “plus” column for this dessert are the following:
