Vegan Kale Caesar Salad
Super-healthy and vegan, our Kale Caesar Salad recipe is a hit with everyone, even those non-kale lovers among us. In fact, it has even been approved by the Bacon-and-Ketchup-Lover, Jeff! This one is perfect when paired with our Vegan Caesar Salad Dressing, which can be made on the spot, or in advance, in just 10 minutes.
With a unique, lemony-twist, this salad works well when served as a quick side dish or eaten as a full meal. Nutrition-packed, it’s a simple way to feed a large group, or it can be separated into individual portions and packed as tasty lunches for the whole week.

Ingredients
Ingredients for Dressing:
- 1 cup organic veganaise
- 2 tbsp red wine vinegar
- 2 tbsp lemon juice
- 1 tbsp vegan Worcestershire sauce
- 1 tsp black pepper
- 1 tsp dijon mustard
- 1 tbsp garlic, chopped
- 1 tsp ground pepper
- ⅓ cup nutritional yeast
- Salt, to taste
Ingredients for Salad:
- 6 cups kale leaves ((remove stems from kale leaves and tear into "fork-friendly" pieces)
- Zest of one lemon
- 4 green onions, thinly sliced
- 1 cup red cabbage, shredded
- 2 carrots, grated
- ⅓ – ¼ cup caesar dressing
- 2 tbsp hemp or pumpkin seeds
Instructions
- DIRECTIONS FOR DRESSING:
Combine all ingredients – adjust consistency with liquids. - Taste for seasoning.
- DIRECTIONS FOR SALAD:Combine kale, green onions, lemon zest, cabbage, carrots with dressing in a large bowl.
- Divide into 4 portions.
- Garnish with pumpkin or hemp seeds.
