I wanted some “fuel” for pre swim eats and rides, so I threw together some basic pantry staples and made these bites in under 15 minutes.

Ingredients

  • 1 1/3 cup Gluten Free Oats
  • ½ cup shredded Coconut
  • ½ cup ground Flax Seed
  • 1 tsp Sea Salt
  • 1 Tbsp Vanilla Extract
  • ¼ Cup Water
  • ¼ Cup Maple Syrup
  • 1/3 Cup Almond Butter
  • ¾ cup mini vegan dark chocolate chips

Instructions

  • Combine ingredients
  • Scoop with small 2 teaspoon scoop into 24 balls (about ½ ounce or 14 grams), roll into balls
