Like their rectangular and over-processed sibling the energy bar, these whole-food energy balls are an endurance windfall when training, or fantastic as a pick-me-up during a long shift at work. One bite will tell you how delicious clean energy can taste, but flavor isn’t where the benefits stop. Loaded with fiber, potassium, and iron from the coconut, and omega-3 fatty acids from the almond butter these energy balls are a snap to prepare and will keep your stamina high while in the saddle, behind your laptop, and everywhere else you need sustained, wholesome fuel.

Ingredients

  • 1 1/3 cup Gluten Free Oats
  • ½ cup shredded Coconut
  • ½ cup ground Flax Seed
  • 1 tsp Sea Salt
  • 1 Tbsp Vanilla Extract
  • ¼ Cup Water
  • ¼ Cup Maple Syrup
  • 1/3 Cup Almond Butter
  • ¾ cup mini vegan dark chocolate chips

Instructions

  • Combine ingredients
  • Scoop with small 2 teaspoon scoop into 24 balls (about ½ ounce or 14 grams), roll into balls
