Coconut Yogurt Tzatziki Sauce

We love making this sauce with our friends over at Coconut Culture’s plain coconut yogurt.  Tzatziki is traditionally paired with gyros or other Mediterranean dishes.  Cucumber, yogurt and garlic are the staple ingredients and we like to fortify it with freshly chopped mint, oregano, dill and a little lemon zest.  Serve atop a plate of roasted vegetables or alongside a platter of chicken skewers.

Ingredients

  • 1 Cup plain, unsweetened yogurt (we used plain Coconut Culture brand)
  • ½ Cup chopped oregano, dill and mint (any combination of)
  • 2 tsp freshly chopped garlic (about 2 cloves)
  • 1 tsp ground black pepper
  • Juice of ½ Lemon or about 1 Tbsp of juice
  • 1 tsp lemon zest
  • ½-1 tsp sea salt
  • ½ Cup diced cucumber (remove seed pocket before dicing so that the sauce doesn’t get watery)

  • Mix all ingredients together
