Coconut Yogurt Tzatziki Sauce

Tzatziki is traditionally paired with gyros and other Mediterranean dishes. Cucumber, yogurt, and garlic are the staple ingredients, and we fortify it with pungency and minerals from freshly chopped mint, oregano, dill, and a little lemon zest. We love to make ours with plain, vegan coconut yogurt made by our friends over at Coconut Culture. Serve this tangy sauce atop a plate of roasted vegetables, or alongside a platter of chicken skewers.

Ingredients

  • 1 Cup plain, unsweetened yogurt (we used plain Coconut Culture brand)
  • ½ Cup chopped oregano, dill and mint (any combination of)
  • 2 tsp freshly chopped garlic (about 2 cloves)
  • 1 tsp ground black pepper
  • Juice of ½ Lemon or about 1 Tbsp of juice
  • 1 tsp lemon zest
  • ½-1 tsp sea salt
  • ½ Cup diced cucumber (remove seed pocket before dicing so that the sauce doesn’t get watery)
