Creamy Coffee Cauliflower Smoothie

Coffee and cauliflower? In a smoothie!? You may be skeptical, but one sip of this and you might believe you are sipping a 1,000 calorie coffee shop delicacy. The combination of decadent cold brew coffee, coconut milk (chock full of plant-based fats and a little bit of iron), and vanilla protein powder combines to produce a smoothie more like a frothy milkshake than a healthy smoothie. In our test kitchen we used Kona Red,and you could try your hand at the overnight cold brew {insert link?} 

We have found that whipping up our smoothies is easier when we prepp some of the ingredients ahead of time. For this recipe you will buy a bunch of bananas, peel them, and cut them in half. Load them into a freezer bag, and next lay them in a single layer to solidify in your freezer. Once solid, you can open the bag, squeeze out any excess air, and reseal the bag. They will keep for up to three months in your freezer. Follow the same procedure with the cauliflower– cut the florets into roughly two-inch chunks (about the size of an average strawberry)– and then bag and freeze. 6 Ounces Cold Brew Coffee (I used Kau’ai Caramel)

6 Ounces Coconut Milk

1 Tsp Vanilla

2 Scoops Vanilla Protein Powder

1/4 Tsp. Salt

1/2 Frozen Banana

1 Cup Cauliflower Florets

6-8 drops Stevia or 1 Tbsp Maple Syrup


First, measure all ingredients directly into the blender. It works best if you put the liquids in first, and then add the frozen solids on top. Finally, puree until smooth.

PRO-TIP: In order to achieve the most smoooooooooth texture we suggest you use a high-speed blender, or even a food processor will work! Certainly the blender you inherited from Aunt Debbie will do the job, however you may have to blend for a much longer time in order to fully incorporate the solid ingredients with the liquid ones.
