Quick Tomato Salad

This quick tomato salad is reminiscent of bruschetta topping.
- Yield: 4 servings
Ingredients
•2 cups halved Cherry Tomatoes
•1/4 cup Extra Virgin Olive Oil
•3 Tbsp White Balsamic Vinegar
•4 cloves of Garlic, finely chopped
•1 tsp Black Pepper
•8 leaves Basil, cut in 1/8” ribbons
•Sea salt
•1/4 cup Toasted Pine Nuts
Instructions
- Marinate the tomatoes for 24 hours in a little EVOO, White Balsamic Vinegar, freshly chopped Garlic, Basil and Pepper
Serve over zucchini noodles and top with some toasted pine nuts for crunch
