Red Pepper, Smoked Paprika And Cashew Dip

Ingredients

  • 1.5 Cups Raw Cashews, soaked in water for at least 1 hour and drained
  • 1 medium Red Bell Pepper; stem and seeds removed and cut into 4-6 pieces
  • 2 tsp Smoked Paprika
  • ¼ Cup Water plus more to thin if necessary
  • 3 Tbsp Lemon Juice (Juice from 1 Lemon) or Apple Cider Vinegar
  • 3 Tbsp Nutritional Yeast
  • 1 Tbsp Agave or Maple Syrup
  • 2 Cloves Garlic or 1 Tbsp Chopped Garlic
  • 1 tsp Sea Salt plus more to taste
  • ½ tsp black Pepper
  • 3/4 Cups Water

Instructions

  • Combine all ingredients in high-speed blender (I use a Vitamix).  Process until Smooth
  • Adjust consistency with Lemon juice and/or Water
  • Adjust seasoning with Sea Salt and/or Smoked Paprika
