Smoked Tomato Vinaigrette

Smoky and roasted tomato and garlic vinaigrette is very tasty yet versatile emulsion of and oil and an acid and can be used to dress salad greens, “quinoa salad or use as a simple sauce for grilled fish and chicken
Ingredients
- ½ Cup Olive Oil
- 3 Tbsp Balsamic Vinegar or Red Wine Vinegar
- 1 tsp Maple Syrup
- ¼ tsp Liquid Smoke (we use Wright’s brand)
- ½ Cup Garlic-Roasted Cherry Tomatoes
- ¼ tsp Dijon mustard
- Salt and Pepper to taste
Instructions
rocess ingredients in a high speed blender or food processor until smooth
To Roast Cherry Tomatoes
Ingredients
- 1 pint Cherry Tomatoes
- 2 small clove of Garlic or 1tsp of mincedGarlic
- 1 Tbsp Olive Oil
- ½ tsp Sea Salt
*save any additional roasted tomatoes to add to a salad or a plate of scrambled eggs
Preparation
- Preheat oven to 350
- Toss Tomatoes, Olive Oil, Garlic and Salt together and place in over proof Skillet
- Roast for 12 minutes
