Whenever I eat at Trilogy Sanctuary, the first words out of my mouth are something along the lines of “Why aren’t you in Solana Beach”?  Trilogy Sanctuary is part rooftop yoga studio and part café that serves exclusively organic, vegan food. Besides the spectacular rooftop, Trilogy has an inviting open kitchen. Reclaimed wood, exposed brick and mismatched tables and chairs give it a warm and cozy feel.   Vegans and omnivores alike will L.O.V.E. this place: To prove this point, I dragged Mr. Bacon and Ketchup are two of the four food groups Geoff along on one of the visits and he thought that it was terrific.

I have a lot of respect for any  restaurant when its menu boasts carefully crafted vegan dishes.  Gone are the days when the singular vegan afterthought of an option was either a salad (hold the cheese) or a plate pasta and vegetables.  Boring and More Boring.   The dishes at Trilogy are well thought out and composed with details such as the crunch in the salads from housemade coconut bacon or corn “nacho” chips made from fresh corn and then dehydrated until crispy. One of my favorites is The Perfect Tacos stuffed with quinoa chorizo, roasted sweet potato hash, avocado, pico de gallo and Trilogy’s almond “love sauce”.   Don’t miss the Crepe filled with more of that coconut bacon, lettuce, tomato and avocado for a nifty twist on the classic B.L.T.

Trilogy also boasts a dessert list that would put most dessert lists to shame.   I’ve  tried the Blueberry Cheesecake and Trio of Almond Butter-based Cookies: Peanut Butter, Oatmeal Raisin and Chocolate Chip.  In the queue for the next visit is the Lavish Buckwheat Crepe, Homemade Nutella, Ripe Bananas and Salted Caramel Drizzle……..yes please!

Cold Pressed Juices, Superfood Smoothies, Housemade Kombucha and Cold Pressed Coffee on Tap round out the rest of the menu.   Why can’t restaurants such at Trilogy be the norm and not the exception?

I’ve only dined at Trilogy–next up will be an aerial yoga class (followed by one of their cold-pressed juices ‘fer sher).  Something to consider while tapering for an Ironman, right?  I think my coach would kill me.
