Vegan Kale Caesar Salad with Green Onions and Lemon Zest

Ingredients
- 8 Cups Kale Leaves (Remove Stems from Kale Leaves and tear into “FORK FRIENDLY” size pieces
- Zest of ½ Lemon or 2 tsp of lemon zest
- 2 Green Onion, thinly sliced (about 4 Tbsp)
- 1 Cup thinly sliced Red Cabbage
- ½ cup shaved vegetables such as Radishes, Zucchini or Carrots
- 1/2 Cup Caesar Dressing
- 2 Tbsp Hemp or Pumpkin Seeds
Instructions
- Combine Kale, Green Onions, Lemon Zest, Cabbage and Green Onions
- Massage ½ cups dressing into kale. The dressing is thick so I usually wear gloves. Add more if you prefer a heavier dressed salad
- Divide into 4-6 portions and garnish with shaved vegetables and then sprinkly with Pumpkin or Hemp Seeds
