cut into halves

White Balsamic Vinaigrette for Salad

White Balsamic Vinegar or Apple Cider Vinegar

minced Shallot or White part of Green Onion

maple syrup

Crumbled Feta Cheese
optional if dairy-free (could also use vegan feta cheese) (optional)
Instructions
In a large bowl, whisk together dressing ingredients.
Add the cherry tomatoes, watermelon, and spinach and lightly coat with the vinaigrette.
Toss in the mint, basil, salt, and pepper.
Just before serving, sprinkle the feta cheese on top.
