Tabbouleh-Style Cauliflower Rice

Ingredients
  

  • 1 medium head cauliflower rice Visit
  • 3 tbsp olive oil
  • 1 tsp sea salt
  • 1 tsp dried oregano
  • 1 tsp chopped garlic
  • 1 cup chopped parsley leaves
  • 1/2 cup chopped mint leaves
  • 1 pint cherry tomatoes
  • 3 green onions thinly chopped
  • 1 tsp black pepper

Optional add-ins

  • 1/4 each thinly sliced red onion
  • 1 can garbanzo beans
  • 1/4 tsp chili flakes
  • 1 cup spinach leaves

Instructions
 

  • In a large bowl, whisk together dressing ingredients.
  • Add the cherry tomatoes, watermelon, and spinach and lightly coat with the vinaigrette.
  • Toss in the mint, basil, salt, and pepper.
  • Just before serving, sprinkle the feta cheese on top.
